I am trying to write the Ratatouille origin story, but I keep going back to the same place in my mind, and what I'm doing feels too simple, I can't embellish it. Why are my pastries beautiful, why are our tarts loved, why did Ratatouille become Ratatouille, the answer is so simple. "Freshness"
I've always worked in banquet kitchens all over the world, before opening my own cafe, and the quantities we produced were so large that the preparation itself took quite a while. When you add sugar to the mix and with the evolving bakery products, I discovered that freshness was often overlooked even before Ratatouille. When I opened Ratatouille, all I wanted was to serve people the right way of cooking, using high-quality ingredients, without getting too fancy, and to provide what I believe society was looking for - the most accurate representation of the standard they love.
About our famous macarons
There's no other kitchen in Turkey that makes macarons like ours. The contents are the very essence of the fruit.
Fudge Chocolate Macaron: It derives its unique chocolate delight from 100% Hershey's cocoa and 56% dark chocolate.
Mojito Macaron: Its freshness comes from fresh mint leaves and lime, and its delight from White Rum and white chocolate.
Lime Macaron: We captured the perfect flavor by combining white chocolate with lime juice and adding lime zest.
Banana Yuzu Macaron: We combined carefully selected ripe bananas with the intense aroma and tang of the yuzu fruit.
Apricot Vanilla Macaron: To achieve a velvety flavor, we combined Igdir apricots with Madagascar vanilla and crowned it with white chocolate.
The pandemic actually presented me with an opportunity in this regard. During the lockdowns, while everyone was at home, I couldn't display my products or could only do so sparingly to avoid waste. After a while, I started working on personalized orders, from baking croissants and making tarts to preparing pastries, cakes, sandwiches, and fresh pasta, all tailored to individual preferences.
During normal times, I might not have been able to bake five croissants at a time, but during the pandemic, these orders turned out to be advantageous. Customers would often leave notes like "Please make it fresh" or "We don’t mind waiting for it to be freshly baked," which heightened my awareness. In reality, I'm just like everyone else; we all want to consume fresh products, access freshness, and purchase fresh items.
